♥Ingredients:
(Makes 36 mini bánh bèo)

Batter:
¾ cup (90 g) rice flour
¼ cup (30 g) tapioca flour
½ tsp salt
1 tbsp (15 ml) vegetable oil
⅔ cup cold water
1⅓ cup hot water

Toppings:
Shredded shrimp:
1 lb (453 g) shrimp, peeled and deveined
½ tsp annatto oil (optional)
1 tsp garlic powder
pinch of salt
¼ tsp ground pepper
1 tbsp (15 ml) vegetable oil

Mung bean paste:
½ cup (100 g) mung bean
1 cup (240 ml) water
½ tbsp vegetable oil
¼ tsp salt

Garnish:
½ cup garlic chive, chopped
¼ cup vegetable oil
½ cup pork rinds, chopped into small pieces (optional)

Fish sauce dip:
1 cup (200 g) sugar
2 cups (240 ml) water
¼ cup (60 ml) fish sauce
fresh chili, chopped

Bột bánh bèo:
¾ cup (90 g) bột gạo
¼ cup (30 g) bột năng
½ tsp muỗng cà phê muối
1 tbsp (15 ml) muỗng canh dầu
⅔ cup (160 ml) nước lạnh
1⅓ cup (320 ml) nước sôi

Nhân bánh:

Tôm chấy:
1 lb (453 g) tôm, lột vỏ, bỏ chỉ đen
½ tsp muỗng cà phê dầu điều (nếu thích)
1 tsp muỗng cà phê bột tỏi
tí xíu muối
¼ tsp muỗng cà phê tiêu xay
1 tbsp (15 ml) muỗng canh dầu

Đậu xanh:
½ cup (100 g) đậu xanh
1 cup (240 ml) nước
½ tbsp muỗng canh dầu
¼ tsp muối

Trang trí trên bánh:
½ cup hẹ, cắt nhỏ
¼ cup (60ml) dầu
½ cup da heo chiên giòn (nếu thích)

Nước chấm:
1 cup (200 g) đường
2 cups (240 ml) nước
¼ cup (60 ml) nước mắm
ớt, cắt nhỏ
